NOCINO, “nut elixir” is prepared by picking these still unripe fruits on the night of St. John (between 23 and 24 June). The hulls are picked still fresh and by hand, one would say, they are unscrewed, given the gesture of turning that it is necessary to detach them, without striking the branches of the young trees. They rest in the Alcohol for seven long months before becoming the perfect raw material for our precious and affectionate Nocino.
