Sessantasei is an organic Italian sparkling wine produced from hand-picked grapes which are harvested during autumn, generally from mid-September. The must is sent immediately to the pressing and the first fermentation takes place at 12 °, while the subsequent stay on the fine lees lasts for about two months. Pale yellow, verging to straw yellow, Sessantasei offers delicate aromas comprised of fruit scents, even toasted. This Italian fizzy wine has a dry and delicate taste, while the sweet and sours notes are perfectly balanced.
