The olives used in the production of the Taggiasca olive oil by Saporare belong to a hegemonic variety in the western coast of the Liguria Region, the so-called Riviera Ligure di Ponente. They are harvested at the mid onset of ripening, between November and December. The valuable oil obtained from them is famous worldwide for its sweetness, while the delicate fruity and mature taste, characterized by a distinct sweet feeling and a typical aftertaste of fresh almonds, is unmistakable. It is the ideal choice to enhance the taste of Genovese pesto.
